They are perfectly portable. so add a few to a sandwich baggie for a car snack or even in your kids lunch boxes as a fun eat-with-your-hands lunch. Or, serve them as a light supper alongside a salad. This Spinach and Cheese Arancini recipe is completely vegetarian but you can easily add in some ham, turkey or sausage to the mix to make it heartier and appealing to meat-lovers.. 

    Spinach and Cheese Arancini Recipe

    Ingredients:

    • vegetable oil: for frying
    • large eggs, beaten: 3
    • cooked and cooled risotto rice: 2 cups
    • parmesan cheese: ½ cup
    • seasoned bread crumbs: 1 ½ cups
    • mozzarella cheese, cut into ¼ inch dice: 2 ounces
    • baby spinach, finely chopped: ½ cup
    • salt: to taste

    Directions:

    <p>
    <strong>Step 1:</strong> Pour enough oil into a large heavy saucepan or dutch oven to reach 4 - 5 inches. Heat oil over medium heat.
    </p>

    <p>
    <strong>Tip: </strong>You can test to see if the oil is ready by dropping a small amount of breadcrumbs in. If they sizzle, the oil is ready.
    </p>

    <p>
    <strong>Step 2:</strong> In a large bowl, combine 2 eggs, rice, cheese, &frac12; cup breadcrumbs and salt. Mix well with your hands.<br />

    <strong>Step 3:</strong> Place remaining egg and breadcrumbs into two separate shallow bowls and set aside.&nbsp;(These are for coating the rice balls.)

    <strong>Step 4:</strong> Using &frac14; cup rice mixture form into balls.<br />

    <strong>Step 5:</strong> Roll the balls into the beaten egg and then into the breadcrumbs to coat.<br />

    <strong>Step 6:</strong> Working in batches, gently place the rice balls into the hot oil and cook until golden brown, about 4 - 5 minutes each. Remove rice balls using a slotted spoon and transfer to a plate lined with a paper towel to drain. Serve warm.<br />
