I pop them into a wrap for the kids’ lunchboxes, pack them alongside a little hummus and some vegetable sticks for a weekend lunch at the park or combine them with steamed vegetables and baked wedges for a healthy and delicious dinner my kids gobble down.
Better-than-KFC Chicken Strips

- chicken tenderloins: 600g
- almond meal: 1 cup
- Italian herbs: 1 tablespoon
- honey: 3 tablespoons
- coconut oil: 1 teaspoon
Preheat oven to 200°C and line an oven tray with baking paper. Place two bowls close together. In one bowl, combine almond meal and dried herbs. Place the honey in the other.
Dip a chicken tenderloin in the honey to very lightly coat, allowing any excess to drip back into the bowl. Roll it in the almond meal mixture and place on the oven tray. Repeat process until all tenderloins are coated.
Brush with a little coconut oil and bake for 10 minutes. Turn the oven to its grill function and grill for two minutes or until crispy on both sides.

These beauties are gluten, dairy, egg and refined sugar free. Using almonds for the crunchy coating means you'll benefit from its high phosphorus content – great for building strong bones and teeth. Almonds also help to alkalise the body and incredibly, they are the only nut that can do that. If you don't have almond meal, try quinoa flakes or breadcrumbs instead.
