Quinoa Tomato-Feta Salad Recipe
The perfect side dish to bring to your next neighborhood barbecue!
- cooked quinoa: 1.5 cups
- cherry tomatoes, quartered: 2 cups
- cilantro leaves, chopped: ½ cup
- scallions, sliced: ¼ cup
- feta, crumbled: ¼ cup
- olive oil: 2.5 tablespoons
- white wine vinegar: 1 tablespoon
- lemon juice: 2 teaspoons
- salt & pepper: for seasoning
Step 1: Chop your veggies. Quarter the cherry tomatoes, chop the cilantro leaves, and thinly slice the scallions, on a diagonal.
Step 2: In a medium sized bowl, toss the cooked (cooled) quinoa with the quartered cherry tomatoes, chopped cilantro leaves, sliced scallions, and crumbled feta.
Step 3: Drizzle in the olive oil, white wine vinegar, and lemon juice. Season to taste with salt and pepper.
