Chocolate Brownies with Buttercream Frosting Recipe

    Brownies are one of my favorite desserts for summer. They are easy to eat with one hand, hold up well to the heat, and are a cinch to make. I pretty much make them every week all summer long. To fancy them up a bit I sometimes add a thick layer of buttercream frosting. Then I cover them with some sprinkles for extra flair. I usually flavor the frosting with vanilla extract, but you could add peppermint extract, almond extract, orange zest, or anything that suits your taste. Bake these chocolate brownies with buttercream frosting up for your first picnic this year and celebrate the return of summer!

    Ingredients:

    • semi-sweet baking chocolate (do not use chocolate chips): 6 ounces
    • unsalted butter: 1 ½ sticks
    • granulated sugar: 1 ¼ cup
    • packed light brown sugar: ½ cup
    • vanilla extract: 2 teaspoons
    • eggs: 3 large
    • unbleached all-purpose flour: 1 cup
    • kosher salt: 1 teaspoon
    • unsalted butter, room temperature: ½ cup
    • vanilla extract: 2 teaspoons
    • confectioner's sugar: 2 cups
    • table salt: 1 pinch

    Directions:

    Step 1: Preheat the oven to 350 degrees F. Butter and flour a 9x9 inch pan and set aside.

    Step 2: In a microwave-proof bowl melt the chocolate in short intervals, stirring between each one until the chocolate is smooth. Whisk in the sugars and vanilla until smooth. Then add the eggs and whisk well. Finally, fold in the flour and salt until just incorporated.

    Step 3: Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 25 to 35 minutes, or until the top is set and cake tester comes out clean. Remove from the oven and allow to cool for at least 2 hours until frosting.

    Step 4: Make the frosting by beating the butter  until soft and fluffy. Beat in the vanilla, sugar, and salt until light and fluffy. Frost the brownies with a thick layer and decorate with sprinkles if desired.
