- zucchini: 1, sliced
- portobello mushroom cap: 1, sliced
- yellow pepper: 1, seeded and sliced
- red pepper: 1, seeded and sliced
- Italian vinaigrette: enough to drizzle
Step 1: Add all the vegetables to a large bowl and drizzle with the Italian vinaigrette. Stir well until all the vegetables are evenly coated with the vinaigrette. Cover the bowl with plastic wrap and marinate for at least 4 hours, or up to overnight.
Step 2: Add the vegetables to a large grilling basket and place it on a grill that is at medium flame. Gently toss the vegetables until they are softened and the edges are charred.
Step 3: Remove the basket and allow to cool slightly. Serve!
