Open-Face Cheesy Roast Beef and Veggie Melts
This sammy is hearty enough to fill you & the fam up at dinnertime!
- ciabatta bread: 1 loaf cut length-wise and cut into four pieces
- deli roast beef: 12 oz., divided
- leftover sauteed or roasted veggies: 2 cups
- deli sharp provolone cheese: 8 slices
Step 1: Lay out the four pieces of ciabatta bread on a nonstick baking sheet.
Step 2: Divide the roast beef and veggies evenly among the four pieces of ciabatta bread.
Step 3: Cover each piece of ciabatta with 2 slices of provolone cheese.
Step 4: Slide the baking sheet into the oven. Turn on the broiler to high and cook for 3 to 5 minutes, until the cheese is melted.
