    We all have dinners we make nearly once a week, and this is mine: Parmesan chicken tenders. It is simply chicken breaded with a mixture of bread crumbs, Parmesan cheese, salt, pepper, and herbs. The reason I make it so much is that it is delicious and so easy! It is also one of those recipes that can serve as a base for many things. For example, top it with salad for a light dinner. Or smother it with sauce and cheese and bake it to make chicken Parmesan. You can even serve it on a roll with lettuce, tomato, and onion as a terrific chicken sandwich. No matter how you serve it you will love this easy dish for dinner tonight.

    Parmesan Chicken Tenders

    Servings: 6 tenders

    Ingredients:

    • all-purpose flour: ½ cup
    • eggs: 2
    • panko bread crumbs: 1 cup
    • dried oregano: 1 teaspoon
    • dried basil: 1 teaspoon
    • finely grated Parmesan cheese: ½ cup
    • kosher salt and pepper: to taste
    • chicken tenders: 6, thinly sliced
    • butter and oil: to coat pan

    Directions:

    Step 1: Set up a breading station as follows: one plate with the flour, one shallow bowl with the eggs mixed with one teaspoon water and beaten well, one plate with the herbs, panko, salt, and pepper mixed together.

    Step 2: In a large skillet warm one tablespoon unsalted butter with one tablespoon oil until just melted. While it is melting bread the chicken.

    Step 3: First, dip the tender into the flour and coat well. Then, dip it into the egg and turn until completely moistened. Finally, dip the cutlet into the panko mixture and turn well to coat.

    Step 4: Add two of the breaded cutlets to the pan and cook over medium heat for about five minutes per side, or until the bread crumbs are evenly browned and the chicken is cooked through. Remove to a plate covered with a paper towel to drain. Once all of the chicken is cooked serve warm with a salad or pasta---or both!
