Quinoa-Coconut Breakfast Cookies Recipe
Cookies...for breakfast! Break out of your boring routine and bake up these healthy treats.
- banana, ripe: 1
- quinoa, cooked: 1 cup
- coconut oil (melted): 1 tablespoon
- honey: 1 tablespoon
- shredded coconut (unsweetened): ½ cup
- flax seed meal: ½ tablespoon
- baking powder: ½ teaspoon
- cinnamon: 1/4 teaspoon
- almond extract: 1/2 teaspoon
- vanilla extract: 1/4 teaspoon
Step 1: Preheat oven to 350 degrees.
Step 2: In a large bowl, use the back of a fork and mash the banana into a smooth consistency.
Step 3: To the same bowl, add coconut oil (melted), honey, flax seed meal, baking powder, cinnamon, almond extract, and vanilla extract.
Step 4: Shape into small, bite-sized balls. Place on a parchment-lined baking sheet, leaving space between each cookie. Lightly flatten tops.
Step 5: Bake for 8-10 min, or until tops are golden.
