A Tex Mex Breakfast Sandwich Recipe

    The fun thing about a classic egg and cheese sandwich is how many ways you can change it up. Lately I've been really into giving our sandwiches a Tex Mex twist. I make a little egg scramble with salsa, toss in some Mexican shredded cheese, and top it with a little avocado. When my husband orders this up I even add a few shakes of hot sauce. That is a little too hot for me, but he loves it! On top of some toasted whole wheat this is a great Tex Mex breakfast sandwich. But, if you really want to make it true Tex Mex, wrap it in a warm corn tortilla. Perfect breakfast idea!

    Tex-Mex Breakfast Sandwich

    Ingredients:

    • eggs: 2, large
    • whole milk: 1 tablespoon
    • salsa: 2 tablespoons
    • hot sauce (optional): to taste
    • Mexican cheese blend: ½ cup, shredded
    • avocado: ½, sliced
    • whole wheat bread: 4 slices

    Directions:

    Step 1: In a large skillet crack the eggs and scramble over medium-low heat with the milk.

    Step 2: Add the salsa about 30 seconds into cooking. Add the hot sauce if using.

    Step 3: Fold the egs in half once or twice and divide in half between the two pieces of bread.

    Step 4: Top each with equal amounts of the shredded cheese. Then top with the sliced avocado. Close with the second pieces of toast and serve.

    Note: This makes a slim, easy-to-eat sandwich which is perfect for both kids and adults.
