- mashed potatoes: 2 ½ cups
- crushed cracker crumbs: 1 cup
- shredded cheddar cheese: 1 cup
- ground mustard (from the spice aisle): 1 teaspoon
- egg: 1 large
Step 1: Preheat the oven to 400 degrees. Line a baking sheet with either nonstick aluminum foil or parchment paper.
Step 2: In a large bowl, stir together the potatoes, cracker crumbs, cheese and ground mustard until thoroughly combined.
Step 3: Using clean hands, roll into 1-inch balls and place on the cookie sheet about 1-inch apart. Continue until all the potato mixture has been used.
Step 4: In a small bowl, beat the egg well. Use a pastry brush to brush the egg on the potato balls.
Step 5: Bake for 15-20 minutes, until golden. Let cool for 5 minutes before transferring to a serving dish. Enjoy immediately.
Hint: These are best served hot from the oven. However, Step 2 can be completed ahead of time; just form the balls and store covered in the fridge for up to 18 hours before cooking.
