    Ingredients:

    • mashed potatoes: 2 ½ cups
    • crushed cracker crumbs: 1 cup
    • shredded cheddar cheese: 1 cup
    • ground mustard (from the spice aisle): 1 teaspoon
    • egg: 1 large

    Directions:

    Step 1: Preheat the oven to 400 degrees. Line a baking sheet with either nonstick aluminum foil or parchment paper.

    Step 2: In a large bowl, stir together the potatoes, cracker crumbs, cheese and ground mustard until thoroughly combined.

    Step 3: Using clean hands, roll into 1-inch balls and place on the cookie sheet about 1-inch apart. Continue until all the potato mixture has been used.
