    Ingredients:

    • white quinoa (dry): 1 cup
    • asparagus: 1 bunch
    • shelled soybeans (edamame): ½ cup
    • petit peas (frozen or fresh): ½ cup
    • small radishes (thinly sliced): 3
    • sliced scallions: ¼ cup
    • fresh mint leaves: ¼ cup
    • extra virgin olive oil: ¼ cup
    • lemon juice: ½ lemon
    • lemon zest: 1 lemon
    • smooth Dijon mustard: 1 tablespoon
    • crumbled feta cheese: ⅓ cup
    • salt and pepper: to taste

    Directions:

    <strong>Step 1:</strong> Rinse quinoa. In a small sauce pan, bring 1 cup of water, a pinch of sea salt, and a light drizzle of olive oil, to a boil. Add rinsed quinoa, lower to simmer, and cook covered for 15 minutes (or until all of the water is absorbed.) Transfer to a large bowl and allow to cool.<br />
