One of my favorite simple spring or summer meals is roasted salmon with pesto. I often make pesto in big batches so that it is always on hand.
When the day comes I have next to no time to cook, I swipe a little pesto on the salmon, pop it in the oven and have a delicious dinner on hand in minutes. I like to pair it with some easy couscous and a great salad for a terrific healthy dinner for the whole family.
- Serves 2
- 16 ounces salmon
- 4 teaspoons homemade pesto
Preheat the oven to 400ºF. Spread 2 teaspoons of pesto on each pieces of salmon Line a rim. Line a rimmed cookie sheet with aluminum foil and place the fish on the sheet, pesto side facing up. Roast for 15-18 minutes, or until salmon is no longer pink in the center. Remove from the oven and serve hot.
