On occasion I even make them for dinner! I recently unearthed my Grandmother’s old cottage cheese protein pancake recipe and we’ve really been enjoying them. They have so many eggs that they are denser than most pancakes and are packed with protein. I think she got the recipe off the back of a box or in a magazine a few decades ago; those were the source of many of her favorite recipes when she was a widow cooking for one. Cottage Cheese Protein Pancakes

- cottage cheese: 1 cup
- eggs: 6
- all-purpose flour: ½ cup
- salt: ¼ teaspoon
- oil: ¼ cup
- milk: ¼ cup
- vanilla extract: ½ teaspoon
Step 1: Place all of the ingredients in a blender and blend for exactly 1 minute.
Step 2: Heat butter in a skillet until it begins to bubble then pour in some batter to desired pancake size. Cook until the pancakes are golden brown on one side. Then flip and cook on the other side.
Step 3: Repeat with remaining batter.
