I’m all about a super quick, nutritious breakfast! I usually make this for myself after getting the kids off to school, the house picked up, and my coffee brewed.
It only takes a couple minutes and it’s satisfying and delicious. And then my day can officially begin!
- Olive oil to coat pan
- 1 small flour or corn tortilla
- 1 egg
- 1/3 cup graded cheddar cheese
- 1/4 cup packed spinach leaves
- 2 tablespoons salsa
- Salt and pepper
Total Prep and Cooking Time: 5 minutes
Heat a large saute pan with olive oil over medium-high heat. Place the tortilla on one side of the pan and crack the egg into the other side. While the egg is cooking, sprinkle the tortilla with the cheese and top with the spinach. Once the cheese is melted the egg should be cooked. At this point, flip the egg if you like over easy, otherwise leave it as it is. Add most of the salsa to the spinach and top with the egg. Add the remaining salsa on top of the egg — and that’s it! Delicious!
