Banana Oat Breakfast Fritters

A few mornings ago, my 4-year old asked me to make him banana bread.  With 20 minutes before we had to walk out the door for school, and both kids still in pajamas, I came up with this quick banana treat instead.  

 

I told him my quick banana experiment might turn out like round slices of banana bread.  Well, that was not the case. The result neither resembled nor tasted like banana bread, but it took less than 10 minutes and they were delicious!  And it still tasted like banana, of course!  My little guy loved them and ate five of them before we left (barely making to school on time)!

These are packed with healthy ingredients and contain a modest amount of sugar.  A super quick, super healthy, super yummy breakfast!

Ingredients:

2 extra ripe bananas

1 tablespoon flax meal

1 1/2 teaspoons brown sugar

1 teaspoon vanilla extract

1/2 cup rolled oats

Butter to coat pan

Preparation:

Serves 2

Prep Time: less than 5 minutes

Cooking Time: less than 5 minutes

In a medium-sized mixing bowl, mash the bananas with the back of a fork.  Then mix in the flax meal, sugar, vanilla and oats.  

Over medium-high heat, heat a large non-stick saute pan with enough butter to coat the pan.  Use a 1/8 measuring cup to scoop each fritter into the pan.

You should hear a sizzling sound — if  you don’t, your pan’s not hot enough.  Wait until the pan is very hot and listen for the sizzle! Flip the fritters when the bottom is nicely browned, about 2 minutes.  Then cook the other side to brown, about another 2 minutes.  Please note that these fritters will not behave like pancakes. They will be a bit fragile, so flip them carefully.
