6 Irresistible After-School (or Anytime) Snacks

 

Even though my daughter is only in preschool she comes home from her afternoons completely ravenous and I like to have something healthy and filling for her to eat to hold her over until dinner. Here are some of our favorite after school snacks.

1. Apple Slices with Peanut Butter and Rice Krispies

Any nut butter can be substituted for the peanut butter. We dip apple slices in peanut butter and roll them in rice krispies for some fun crunch.

2. Frozen Chocolate Dipped Bananas

Peel a banana, dip it in melted chocolate, and freeze it on a popsicle stick for a delicious small bite that’s fun too.

3. Homemade Trail Mix

We take this kid favorite to a new level by adding in all kinds of crazy nuts, dried fruits, and maybe a sweet treat like chocolate chips or M&Ms. This pimped up trail mix changes every time we make it and we love it that way!

4. Chocolate-Dipped Peanut Butter Rice Cake Sandwiches (pictured)

These treats take a little planning, so I usually make them in the morning before she goes to school. Sandwich two rice cakes with peanut butter and dip them in some melted chocolate chips. Wrap in wax paper and freeze until right before pick up. Allow them to thaw about 15 minutes before eating.

5. Mini-Smoothies

A full smoothie can ruin dinner, but a small smoothie – about half a pint – is the perfect snack portion. I make mine with 1 cup low-fat yogurt (any flavor), 1/4 cup berries, 1 teaspoon honey, and a pinch of cinnamon. Blend and serve!
