Thanksgiving may be over but that probably hasn't diminished your cravings for fall flavors or Thanksgiving recipes. Plus, you likely have a fridge full of delicious holiday leftovers. Here's a great recipe to make with leftover favorites: Thanksgiving turkey, cranberry sauce, stuffing, and sweet potatoes, with very little prep time. Make these Turkey Meatball Sammies for lunch today!

servings: 5 sandwiches (10 meatballs)
prep time: 10 minutes
cook time: 18 - 20 minutes
total time: 30 minutes

Ingredients:

  • cooking spray
  • 1 pound ground turkey
  • 1/2 cup grated sweet potato
  • 1/2 cup stuffing cubes
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/4 cup water
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoons salt
  • 5 sandwich rolls
  • 3/4 cup cranberry sauce

Preparation:

Step 1: Preheat oven to 400 degrees. Spray a baking sheet with cooking spray.

Step 2: In a large bowl combine turkey, sweet potato, stuffing cubes, breadcrumbs, egg, water, poultry seasoning, and salt and mix with your hands until just combined. Roll into 10 equally sized balls.

Step 3: Place balls onto prepared baking sheet.Bake until golden (about 18 - 20 minutes), turning the balls over halfway through.

Step 4: Spread each of the sandwich rolls with cranberry sauce and top with two meatballs per sandwich. Enjoy!
