For fun, I created a "crust" that will not be left on your child's plate . . . ever. Sprinkles! I use multi-colored, but feel free to use your child's favorite color, or whatever suits your mood. This is great for a quick lunch, or for a party to make a very pretty, fun presentation on a platter! This is also a great one to let your kids help with. They'll love to dip the bread into the sprinkles!
2 slices of bread
about 1 1/2 teaspoons creamy peanut butter
about 1 1/2 teaspoons of your favorite jelly
1 teaspoon unsalted, softened butter
about 2 tablespoons rainbow sprinkles
Makes 1 Sandwich
Stack one slice of bread on top of the other and, using a serrated knife, remove the crusts. Spread the peanut butter on one slice, and the jelly on the other. Put the sandwich together and cut diagonally to make two triangles. With a spreading knife, spread the edges of each triangle (where the crust was) with the softened butter. Place the sprinkles on a plate and with a bit of pressure, press the buttered edge of each sandwich into the sprinkles -- it will become the new "crust."
