Step 1: Fill a large saucepan with water and add 1 teaspoon kosher salt. Bring water to a boil.
Step 2: Add the green beans to the boiling water. Cook for 3 - 4 minutes, or until the green beans are firmly tender and can easily be speared with a fork. Drain water and plunge green beans immediately into a bowl of ice water. This will stop them from cooking and help them stay crunchy and a beautiful bright green.
Step 3: In a large mixing bowl combine vinegar, olive oil, mustard, sugar, salt, pepper, and parsley. Whisk vigorously to make sure everything is thoroughly combined. Add the green beans to the bowl and toss well.
Step 4: Cover bowl with plastic wrap and place in the fridge for at least 3 hours or up to overnight. Serve room temperature, or reheated in the microwave for 1 minutes or until desired temperature.
Step 5 (optional): To ramp up the falvor even further sprinkle the top with crumbled feta or goat cheese.
