Flourless Chocolate Decadence Cookie Recipe

I recently wanted to make a special dinner for my parents.  I managed to get the meal all ready, but after entertaining my boys during their Winter Break on that day, I found I only had 30 minutes to make dessert.

 

The dessert had to be chocolate, of course, because my mom simply won’t acknowledge anything without chocolate as dessert.  I quickly grabbed a bag of chocolate chips and a few eggs, and I went to work.  

I really wasn’t sure how these would turn out, but I’m happy to report they turned out fantastically!  Yay!  They are very rich and extremely delicious!  We all loved them!

Ingredients:

  • 2 cups semi-sweet chocolate chips
  • 3 egg whites
  • 2 teaspoons vanilla extract
  • 1 tablespoon cocoa powder

Preparation:

Makes approximately 1 dozen cookies

Prep Time: 5 minutes

Cooking Time: 12 to 15 minutes

Preheat the oven to 350 degrees. Cover a baking sheet with parchment paper, and set aside.

Melt one cup of the chocolate chips in the microwave in 30 second intervals.  Once the chips are all melted, set them aside.  

In a large mixing bowl, use an electric mixer with the whisk attachment on a high speed to whip the egg whites.  Whip them until soft peaks form, about 3 to 4 minutes.  Use a spoon or spatula to quickly mix in the melted chocolate, vanilla, and cocoa powder.  Then fold in the melted chocolate, and the remaining cup of chocolate chips.

Use a 2-inch ice-cream scoop, or two teaspoons, to shape balls of dough and place them on the parchment-lined baking sheet, leaving space for them to spread a bit.  Bake for 12 to 15 minutes.  They will be firm on the surface and cake-like in the center.
